Timing guide: Blending and topping take about 10–15 minutes with already-frozen banana and a suitable blender.

Ingredients

Method

  1. Have the toppings and bowl ready. If your banana is not already frozen, slice and freeze it on a lined tray until solid, then store covered in the freezer. The blending time below assumes fully frozen fruit.
  2. Run the sealed açaí packs briefly under water just until you can break the purée into pieces. Open the packs and put the pieces into a powerful blender with the frozen banana, berries and 2 tablespoons milk.
  3. Secure the lid. Pulse, then blend on low, using only the manufacturer-approved tamper through its designated lid opening. If the blades stall, switch off and unplug before scraping down. Add milk 1 tablespoon at a time, just enough to let the mixture move.
  4. Stop when smooth and thick enough to hold a soft mound on a spoon. Transfer to the bowl, add the measured toppings and eat immediately while cold and spoonable.

Buy purée, not a drink

Look for frozen unsweetened açaí purée rather than bottled juice, powder or a sweetened ready-to-eat sorbet. Those products have different sugar and water levels. Banana and berries balance the earthy fruit here without needing syrup.

Less liquid makes a thicker bowl

A smoothie can circulate freely in a blender; a thick bowl needs patience, small frozen pieces and minimal liquid. Never push a spoon toward moving blades. A less powerful blender may require extra milk and produce a softer result, which is still pleasant served as a smoothie.

Finish just before eating

Keep frozen ingredients frozen until you are ready to blend. Wash the fresh topping fruit under running water. Choose granola and milk to suit your needs: they may contain wheat, milk, soy or nuts.
